We love Nutritionist Madeleine Shaw’s brilliant website and her many fantastic recipes. Here breakfast options are amazing and we’ll cover them and other options in a future post. Meanwhile, here’s a good gluten free, Madeleine Shaw option for those bread and grain avoiders:

Going gluten free…and pretty much grain free, makes bread off the cards….usually. I have to say I really don’t miss it that much…however the other day I had bought some delicious smoked salmon and avocado and thought why not get a little experimental and make a proper sandwich. In this creation I have used almond flour instead of regular flour. Almond flour for those who are a bit foreign to this way of eating is ground almonds or almond meal. You can get this in health food stores or just make your own by placing raw almonds in a food processor until they form into flour. I love love almonds as they are a great source of manganese and copper, these two trace minerals are essential cofactors to disarm free radicals produced, keeping our energy flowing. YAY! Almonds also contain mono-saturated fat which is very beneficial for the heart. The Vitamin E within this acts as an antioxidant and reduces the risk of heart diseases. (such a magical nut)
